What constitutes a good. Good food, good service, moderately priced. Why You were initially a success. People started talking about this work the day it opened. How come? Because we had good food. We had the best. We brought in people from all over the country and all over the world to produce a good restaurant in Baltimore. It's got to be more than that. You got more than food, you got atmosphere. We had that to start with. We had a very good building in a good area of downtown to work with. It's just been Mr. Windsor. Mr. Gladding created what you see around you now from what was already existing. Can Baltimore stand or support more restaurants like this? Yes. Again, people are ready to go out and dine with the elegance that Shambaugh has died. Yes, I think it is downtown. I think all of its downtown. What would you say is more successful, the bistro, or is there equally successful for what they're doing? A bistro is casual French dining, casual attire. It's a fun place to be for a formal atmosphere with formal dining. Shambaugh has that to offer, and the two compliment themselves very, very well. It covers all areas of dining. Are you from Missouri at all? Yes, I'm from Annapolis. Baltimore for years has been known as a town that never does anything. Do you find that you believe business is better when there's theater? Yes. Definitely. So whenever there's activity downtown for people to go to, they're looking for someplace nice to dine. They want to make an evening of coming downtown. And it's becoming a very popular thing to do later in life. The bistro does serve very late at night, as far as we're concerned, 1245, 12:45, and gives you just enough time to eat before everything has to close down legally. If they're going to have alcohol or wine with their meal at 2:00, you have to shut that off anyway. So to stay within the legal limits, we think we stay open quite late enough. Do you think that's archaic at this point, using the legal logic change? No, I don't. I think for safety purposes, they're necessary. Uh, if someone goes out at 9:00 in the evening and they drink until 6:00 in the morning, are they going to be safe? They're going to be hazard to, you know. But I think. Are you ready? Yep. Well, because you have a restaurant in Washington is open seven days a week, is named Coffee, the pay. And it's 24 hours a day. And here in Baltimore, since I opened this place, because a lot of people ask, why do you have to go? Yeah, because you have too many you have too many things to do in the Baltimore because a lot of like restaurants and bars and nightclubs and stores, fashion stores and too many things and people style because I know a lot of people in Washington and a lot of people ask me if I if I go some place for sale, like on Broadway, if I went in too many places and I'd be looking for a lot of people and a lot of people, but then they call me all the time. If you find something, you move from Washington. Baltimore. Exactly. Yeah. Do you think it would be bad if Baltimore became like, Washington or would it be better? No, I don't think so. Good. Good.
